Shrimp, Pepper and Peach Salad

Ingredients:

1 lb frozen cooked shrimp

5 peaches or nectarines or a combination

1 pepper

Spice mix

2 tsp of cumin

½ tsp chipotle pepper

1 tsp garlic powder

Salt and pepper to taste (for the shrimp)

2 tsp sugar

2 TBSP fresh lemon juice

1 TBSP olive oil

1 tsp cumin

Salt and pepper to taste

Procedure:

  1. Thaw the shrimp and remove the tails. Toss the shrimp with the spice mix and bake for 4 minutes in a 400-degree oven to flavor the shrimp.
  2. While the shrimp cool, cut up the peaches, pepper, and mint into a medium-sized bowl. Toss them with 2 tsp of sugar.
  3. Remove shrimp from pan with a slotted spoon and add to the bowl. Add the olive oil, 1 tsp cumin, salt and pepper. Serve on romaine leaves.
