Yesterday Robert and Tom from Spiga Restaurant entertained customers’ tastebuds with a delicious cold panzanella/gazpacho soup hybrid. Head Chef Robert referrs to it as “Spiga’s Tuscan-Style Chilled Tomato Soup… Panzanella meets Gazpacho”.

The end result was fantastic – a fresh chilled treat to enjoy! The crowd was shocked to learn that there wasn’t a drop of cream in the soup, but it was thickened with bread instead!

Robert was generous enough to stay for about two hours sampling out each batch – and he even prepared it three separate times to show each new crowd how to make this palate pleaser. We’re lucky enough to have a copy of the recipe which you can find here.

You can find this soup on Spiga’s new menu as well!

Now in your gazpacho haze, don’t forget about next weekend!

We have our annual Corn Festival where you can sample our delicious fresh corn under our tent!

We’ll be starting around 10am and finishing sometime in the realm of 4pm so stop on by and grab an ear!
