Fava Restaurant Features Volante’s Berries
Chef Jeff Kaye, of Fava Restaurant in Needham Center, presented a stunning five course wine dinner this Wednesday evening, and gave our homegrown strawberries a starring role. Due to the delicate sweetness of the fruit, he made a last minute change to the menu to preserve their special flavor and keep it from drowning under a heavy wine. The spinach salad, with strawberries, shallots and balsamic poppy-seed dressing was very rich, while light.
The dinner was built around the wines of Argentina, and the team from Fifth Avenue Liquors in Framingham did a wonderful job of explaining the specific terroir of each wine; something we farmers could identify with. The Wasiks of The Cheese Shop in Wellesley also presented an exquisite plate of cheeses from around the globe. In addition to the Wasiks, Chef Kaye is a long time friend of the farm, and shops with us in season regularly. Keep an eye on his menu and specials for our produce. We really love that Jeff, and so many of our local chefs, make it possible for you to eat locally even when you aren’t doing the cooking.
