<p>Santa will be visiting and we encourage children to come and chat and have their parents bring cameras to take a photo with him. Hopefully he will have a chance to read The Night Before Christmas like he did last year during his visit!</p>
<p>Additionally, several of the local artists we have been featuring in the stand over the last few months will be on hand to show their wares, many of which may be the perfect gift for your special someone. <p>Chef Todd has some great dishes to fill out your holiday table available in our refrigerator case right now and through next week. <p><a href="http://volantefarms.files.wordpress.com/2012/11/img_2428.jpg"><img class="alignleft size-medium wp-image-4419" title="IMG_2428" alt="" src="http://volantefarms.files.wordpress.com/2012/11/img_2428.jpg?w=225&#038;h=300" height="300" width="225" /></a>We are still picking some tasty veggies for your holiday table as well. A recent crop of Homegrown Carrots has finally come on. We are going to have homegrown cauliflower, broccoli, collard greens, cabbage, lettuce, radishes, brussels sprouts, parsnips, beets, kale, swiss chard, parsley, and maybe a few other special items from our fields as well through the next week and beyond. Of course whatever we can&#8217;t come up with on our own we will bring in from our closest partnering farms and other distributors to make sure you can complete most of your holiday shopping here.</p>
<h2><span style="color:#008000;">The Farm will be closed on Thanksgiving Day.</span></h2>
<p>Christmas Trees will begin their arrival this weekend and you will get to witness the annual scurry to get them priced and stacked and ready for sale. The trim a tree shop is already running, Poinsettias are in, and greens are expected to arrive very soon as well. We will begin our extended Christmas Season hours on Friday Nov 23. The Farmstand will close at its normal 7 pm, 6 on weekends but tree, wreath, flower and trim a tree will be available until 9 pm on weekdays and 7 pm on weekends.</p>

<p>This <span style="color:#008000;">Saturday afternoon, Nov 17, </span> <a href="http://ontheedgeknifesharpening.com/OnTheEdgeKnifeSharpening/Welcome.html">Patti Small of On The Edge Knife Sharpening</a> will be set up for a special pre-Holiday session in the parking lot around 3:30 until 5 or so. She has been available the second Monday of most months, but if you havent seen her yet this is a great opportunity to tune up your blades professionally just in time for the biggest food holidays of the year. Look for her white van full of dangerous looking tools parked near the deli and hand over your blades for her to hone. Check her <a href="http://ontheedgeknifesharpening.com/OnTheEdgeKnifeSharpening/Welcome.html">website</a> for details and pricing, but the average carving/ chefs knife will be $10.</p>
<p>We have also set our annual <span style="color:#008000;">Christmas Open House for November 25</span> from 5-7 in the trim a tree shop. Stop by and visit with Santa and take some pictures with your own cameras, try some of the cheeses and deli patters we now offer for your holiday catering needs, meet some of the artists we have been exhibiting in the Farmstand this season as well and see what they might have to offer for your gifting needs.</p>
<p>Lastly, this is likely to be the final post on this blog. After a busy season we are nearly ready to launch the all new <a href="http://www.volantefarms.com">volantefarms.com</a> !</p>
<p>The new site will give you direct access to the department you are looking for as well as online options for purchasing gift cards, an events calendar, easy access to hours, and a new home for our blog which will still have the most up to date information about the goings on here at Volante Farms. <p>You didn&#8217;t think we would do it but here we are. November 1st and we are open for business. That day we&#8217;ve been telling you about for a year now has finally happened. Volante Farms did not close for the season. Who knows what we will do with all those &#8220;Closing Soon&#8221; posters. Even stranger, not having to find a place in the barn to store all those produce tables, I might have to come up with some crazy winter projects to fill the space.</p>

<p>So just for the sake of normalcy we did take the time today to scrub the heck out of the place. We even started to break down the greenhouse display to transform it into the winter wonderland that will be this year&#8217;s new, expanded trim-a-tree shop and winter decoration smorgasbord.</p>
<p>While we venture into uncharted territory this month there is a lot of excitement. We are going to focus on some new sides to the farm. The fields are still producing an amazing amount of broccoli and cauliflower, lettuce, and a variety of sweet root crops, but we know the growing season can&#8217;t last forever. In addition to the frost sweetened produce filtering in to the stand, we will continue to bring you the finest in local produce and a full array of seasonal vegetables to complete your meals: quick, easy, family, holiday or otherwise.</p>

We should have fresh dug parsnips through Thanksgiving and hopefully a few more to dig in the spring.</p></div>
<p>The Farm Kitchen is getting into the swing of fall with several new dishes. Chef Todd&#8217;s Pumpkin Hummus is a sure-fire fall win, as well as his Root Vegetable stew, with our <strong><span style="color:#008000;">HOMEGROWN</span></strong> veggies and Vegan too,  just hitting the shelf today for the first time. The new Mushroom Stuffing flew off the shelves too quick, I barely got a taste, so I&#8217;ll be waiting for more of that with you. With these savory and sweet tastes to take us right into thanksgiving, remember to keep us in mind for your Thanksgiving meal. Remember that for the first time you can dress your holiday table with locally grown produce, and in a pinch (or just cause you know its great) with some prepared foods from the Farm Kitchen as well.</p>

<p>Two generations of Volantes hail from Babson College and that loyalty and our proximity to the school make teaming up for food positive events a simple choice. This one couldn&#8217;t have been more exciting so we leaped at the chance to host a reception for Babson&#8217;s Entrepreneur in Residence, <a href="http://www.travelchannel.com/tv-shows/bizarre-foods">Bizarre Foods&#8217;</a> Andrew Zimmern and his friends. Andrew was involved in all of Babson&#8217;s Food Day events and the fireside chat he helmed on Tuesday evening was one great part. He was joined by friends Michel Nischan of <a href="http://www.dressingroomrestaurant.com/">Dressing Room</a> and <a href="http://wholesomewave.org/">Wholesome Wave</a>, Jamie Bissonette of <a href="http://toro-restaurant.com/">Toro</a> and <a href="http://www.coppaboston.com/">Coppa </a>in Boston, Skip Bennett from <a href="http://www.islandcreekoysters.com/">Island Creek Oyster Farm</a>, Nancy and Tim Cushman from <a href="http://www.oyarestaurantboston.com/">O Ya</a>, and our very own Todd Heberlein.</p>

<p>This impressive crew discussed food trends, sustainability, and the future of food for a few hours to a rapt audience. They then &#8216;retired&#8217; to Volante Farms for an exciting and fun reception centered on each participants&#8217; individual skills and passions. The attendees of the invite only reception included the chefs and their friends, Babson dignitaries, and several lucky thought leaders interested in food entrepreneurial action and networking with some of Greater Boston&#8217;s hottest food innovators.</p>

<p>Each chef was given a station and put their skills and those of their crews to work creating some signature and unique tastes for the crowd. Andrew and Jamie set up dueling sausage grills in the shadow of our Hay Man. Andrew&#8217;s personal recipe Goat Sausages were paired with roasted peppers and onions and a mustard dressed slaw made with our own homegrown Savoy Cabbage and served with grilled Clear Flour Ciabatta.</p>

<p>Jamie Bissonette is one of Boston&#8217;s small plate kings, so he really pulled out the stops for a Vietnamese Pork Sausage made from a very special pig from our friends at Brambly Farm. The sausage was wrapped in chard and served on a hot dog roll with a kick of cauliflower kim chi. Thank goodness for the warm and clear night, as the line for the grills was usually the longest, and with Andrew Zimmern gregariously tending the coals, it was an enjoyable spot to hang out.</p>

<p>Inside, Michel Nischan, a sustainable food pioneer was recreating a dish that arrived with rave reviews for Missouri Style Dry Ribs, cooked in a sous vide and then finished off in the Volante&#8217;s Farm Kitchen. Michel is a huge fan of farm to table cooking and is always eager to talk about how to make food make more sense, so he was a perfect addition to the Food Day lineup and a welcome and cheerful presence in our kitchen.</p>

<p>Island Creek Oysters brought a literal boatload of their Duxbury farmed oysters which was a nearly overwhelming treat for everyone. A real success story in food entrepreneurship, Island Creek has become <em>the</em> branded oyster in the Boston area as well as being attached to one of the hottest restaurants in town <a href="islandcreekoysterbar.com">Island Creek Oyster Bar</a> in Kenmore Square. We were thrilled to discuss future opportunities to host them at the farm.</p>

<p>James Beard Award Winners Tim and Nancy Cushman of O YA also joined us in our farmstand with platefuls of Hamachi Sashimi: viet mignonette, Thai basil, and shallot. The flavor sparkled with heat and spice and showed why the Cushmans have one of the premiere spots in Boston for sushi or any food. Nancy was as impressed by our space as we were by their offering, so hopefully we can work together in the future as well.</p>

<p>To round out all these fabulous dishes, Chef Todd and our kitchen staff used the freshest and finest ingredients from our fields to create vegetable dishes to complement the proteins provided by the others. Many of his dishes are also going to be available in our prepared case this fall so if this post has had your mouth-watering, there is an easy way to access some of it.</p>

<p>He served his smoked vegetable stew with fresh shell beans that is available now. Todd also produced some savory mushroom stuffing that he plans on making available through the fall. His house cured bacon and pumpkin seed bark were a unique addition to the large cheese spread and complemented his signature pumpkin hummus, served in Cinderella pumpkin shells. Using our local partner&#8217;s grains he also created a <a href="http://www.fourstarfarms.com/">Four Star Farms</a> Wheatberry Salad with Homegrown Beet Relish. Look for these and take offs on these in our refrigerator case over the next few weeks.</p>

<p>Beverages were handled by our friends at <a href="http://theurbangrape.com/">Urban Grape of Chestnut Hill</a> and newly the South End. They provided wines to pair with the wide variety of dishes on the menu. For the lighter options Chef Todd prepared his famed cucumber herb water and Food Sol partner Mission Root donated several of their ginger laced juice drinks for sampling.</p>
<p>Dessert was handled by a tag team effort from our own chef Jen who prepared bite sized pumpkin cheesecake with gingersnap crust, pecan and apple tartlets and Babson Food Sol associates Unreal Candy and Kris Bronner who was making fresh kale and pumpkin seed ice cream in liquid nitrogen to amazed onlookers.<a href="http://volantefarms.files.wordpress.com/2012/10/img_9244.jpg"><img class="alignnone size-full wp-image-4325" title="ICOBoysters" alt="" src="http://volantefarms.files.wordpress.com/2012/10/img_9244.jpg?w=600&#038;h=400" height="400" width="600" /></a></p>
<p>The whole evening was very exciting and fresh and we were very happy to share our farmstand with our Babson neighbors and their special guests. We appreciate our customers understanding when we had to close early to transform the stand from shop to event hall. We know it is an inconvenience and thank you for putting up with it. It was great to see the stand in a different light, so open for the first time since our grand opening this spring. The beauty of the structure really was on display and is a source of pride for us and hopefully for the whole community.</p>

It&#8217;s a beautiful way to start the day on the lettuce crop.</p></div>

<p>The last few days of Indian Summer have kept the Ice Cream Stand hopping. We are planning on keeping it open until Halloween, so be sure to get your jimmy and frappe fixes while there is still time.</p>

<p>We still have around 30 varieties of apples on hand. This week saw some of the pie favorites dry up, but fresh tastes like Cameo make an appearance. Dress up your pumpkin patch with some color too!</p></div>
<p>The greenhouse is still chock full of blooming mums, and fall annuals, including a fresh shipment of fall pansies, perfect flowers for cool weather color. You&#8217;ll also find hundreds of pumpkins for perusal in and around the greenhouse as well as out in front of the farmstand near the Hay Man. While pumpkins are prevalent this year, it shouldn&#8217;t keep you from picking out yours soon. Carving time is at hand!<a href="http://volantefarms.files.wordpress.com/2012/10/img_2042.jpg"><img class="alignnone size-full wp-image-4278" title="fall pansies" alt="" src="http://volantefarms.files.wordpress.com/2012/10/img_2042.jpg?w=600&#038;h=866" height="866" width="600" /></a></p>

This is just one of 8 varieties and four colors of cauliflower we grow. Also worth note this week is Chef Todd&#8217;s Cauliflower and Cauliflower Mushroom Gratin in the prepared foods section.</p></div>
<p>The field, despite the freeze, does have quite a bit to offer still. Broccoli and cauliflower are arriving steadily from our Standish Field.  We have several crops of lettuce at hand, that we plan on bringing in as long as weather allows. Hopefully you&#8217;ve noticed the return of homegrown cabbage to the stand, plus our fall only Chinese Cabbage.</p>

<p>The salad turnips that are so sweet and even great raw that were such a hit in early summer are back as well, though only limited as we were only testing them out as a fall crop.</p>

<p>The parsnips are still going strong as well, and we should have enough to harvest them til the ground freezes. A new vegetable also hit the stand this week. Our homegrown Flower Sprouts were a fun and unique trial crop this year. They are a cross of brussels sprouts and kale that result in tiny florets that are great when stir fried, roasted or treated in any of the methods you would to either of the parent vegetables. This special food is proving to be fairly inefficient to grow in the field, so if you love it make sure we know!</p>

<p>It is going to be wonderful to be open for the entire holiday season this year, and to be providing fresh produce and prepared foods to our loyal customers. As part of our look into what to offer this season the deli has been working toward getting its catering platters figured out. We look forward to presenting you with options for both deli and cheese platters soon. If you are interested please contact the deli, and we will hopefully have more information readily available on the web soon.</p>

Hands are wringing. Everybody is just trying to make it through these trying times. Many will tell you the choice is clear, but we know better. Choices this important are never cut and dry, in fact sometimes dredging, basting, and taking daring measures will be necessary. How could a choice be clear when the 25 amateur bakers who lobbied for votes today had over 30 varieties of apples from which to choose in the building of their pie platform?</p>

<p>While every pie from our record-breaking turnout began with a beautiful and flaky white crust, from there the diversity was astounding.  The 25 bakers arrived from all walks of life and carried in steaming beacons of Americana all with their own unique twist: Traditional, Conservative, Radical, Flamboyant, Non-Conforming and so much more. Of the 169 apples used to create these masterpieces, 18 different varieties were used. 16.5% of all apples used were Northern Spy, the most used of any apple. Granny Smith made up 13% of apples with Macoun and Cortland close behind. See the <strong>Pie Pie Chart</strong> Below for more details.</p>

<p>The pies were a melting pot of apple varieties and flavors, and were lined up ceremoniously for the judging panel to rule on.  We are grateful that our judges were able to diligently ply through the many offerings and rate them individually on taste, presentation, and overall strength of character.  Our distinguished panel of honorable tasters included five luminaries of the apple world.</p>

<p>Firstly, last year&#8217;s winner, <strong>Emily Williams</strong>, was gracious enough to judge and even brought a handmade apron to present to her successor. Our new house pastry chef, <strong>Jen Heberlein</strong>, brought a critical tongue to the meet, and despite her refined palate, was perhaps the most generous of the scorers. Our former pastry chef, <strong>Merri Klingerman</strong>, graced us with her presence again, a former employee who in past years kept the staff well fed on apple crisp and peach crumble, we knew she had the chops for this.<strong> Ilene Bezahler</strong>, editor of <a href="http://edibleboston.com/">edibleBoston Magazine</a>, is a strong supporter of burgeoning and local food, and we are thankful she was willing to try so much of it today.  Last but not least we were pleased to host <strong>Jon Clements</strong>, Fruit Tree Expert from the UMass Extension Agency. It was his first time to visit our farm and we were only too happy to show off our apple selection to him. We were told if we needed to know anything about apples in New England he is the man to talk to, so it seems pies fall into that category.</p>

<p>So, after much deliberation and bites and palate cleansing and fresh plates, Teri took the judges ballots to the tabulation desk, In her absence, The crowd that had been rumbling was loosed upon the remainder of the pies. Within minutes most of them had vanished under the ravenous claws and plastic forks of the contestants, their families and onlookers who wanted to judge the competition for themselves.</p>
<p>Teri returned with the results and announced quickly that there had been a four way tie for Best Presentation. The following bakers&#8217; pies had the judges eyes from the beginning: <a href="http://volantefarmsevents.wordpress.com/cooking-contests/apple-pie-contest/apple-pie-contest-2012/#jp-carousel-296">Sofie Yellin</a>, <a href="http://volantefarmsevents.wordpress.com/cooking-contests/apple-pie-contest/apple-pie-contest-2012/#jp-carousel-304">Susan Murdock</a>, <a href="http://volantefarmsevents.wordpress.com/cooking-contests/apple-pie-contest/apple-pie-contest-2012/#jp-carousel-308">Mary Wood</a>, and <a href="http://volantefarmsevents.wordpress.com/cooking-contests/apple-pie-contest/apple-pie-contest-2012/#jp-carousel-289">Patty Morrison</a> all received a $10 gift card to Volante Farms.</p>
<p>Then Zoe Lockhart was announced as the third place pie. Her Sour cream Apple Pie was adapted from a Martha Stewart Living Recipe and used Idared apples. The judges liked the tartness of the Idareds as well as the sugary crust. Zoe received a prize of $30 Volante Farms Gift Card and a copy of the edibleCommunities Cookbook, a beautiful collection of local food and recipes from around the country donated by Ilene.</p>

<p>Second Place went to Connie Moore&#8217;s Pi. Using a blend heavy on Empire and light on Northern Spy she got high marks for a flaky crust and excellent apple choice. Connie won a $50 Volante Farms Gift Card and a copy of the edibleCommunities Cookbook.</p>

<p>First Place was testing the boundaries of Piedom, but a clear favorite among the judges. Some onlookers dismissed it as a tart, but in fact the panless pie is a Crostata. Winner Sally Gaudaitis adapted a Joanne Chang Flour recipe for Roasted Apple and Cranberry Crostata using Suncrisp Apples, but got the most points for the excellent rustic and flaky crust.</p>

<p>Brrrr! By the time you read this it may be too late. Freeze Warning in effect for nearly entire state tonight mean the effective end of the regular growing season.  For us it is actually quite late to have not had even a light frost yet, so many of our crops have gotten to live full natural lives already. Corn was picked well past Columbus Day, Tomatoes made it through September, and Peppers into October; fairly good results on all those fronts.</p>

<p>We have taken steps to preserve our final bean crop of the year and will have to wait til the frost lifts off the lettuce in the morning to see how it survived. Cole Crops like Broccoli, Brussels Sprouts, Cauliflower, Kale and Cabbage should only taste better after this brush with cold. If you read this before early morning Saturday, you might want to take steps to harvest the last of your summer vegetables and to pull in any potted plants you were planning on wintering over to next year.</p>

<p>For our part we have been harvesting right along. This week our broccoli and cauliflower crops really bumped up their production. We are picking at least 3 varieties of cauliflower right now, with more on the way. We have started picking homegrown cabbage again too this week, the hiatus between summer and fall crops finally over. In addition to regular green, red, and savoy we also have Chinese Cabbage at this time of year for a change of pace.</p>

<p>In root crop news, we are still harvesting parsnips like crazy and there has been a return to the scene of the summer salad turnips. These pink or white beauties were new to us early this year and seem to really thrive n the cooler temps so we are thrilled they returned for the fall.</p>

<p>With next summer in mind be aware that all our remaining pottery is on sale for 20% off for a limited time as we want to make room for the Christmas Season. Even though we have a lot more storage space than we used to have in the new farmstand, we&#8217;d rather not have to pack it all up and away til next spring, so if there was a pot you eyed earlier this year and want to employ it in the garden next year, consider buying it now at a discount and be ready to go next spring.</p>

The bright orange flesh makes for a delicious soup.</p></div>

She has been baking long hours today to have a lot of fresh tastes available to you this weekend!</p></div>
<p>To bookend our apple day on Sunday, Lifestyle Editor of Yankee Magazine, Amy Traverso will visit the farm at 3:30 pm to sign copies of her Apple Lovers Cookbook. This beautiful book delves into the best uses of over 50 types of apples and offers up 100 recipes to use them in. Bring you own copy in, or purchase one on site on Sunday and chat with Amy about apple choice, something we make exciting with the 32 varieties we have available on the stand today. Also note the new time of the book signing, now at 3:30 until about 5.</p>
